BRIDGE Yin Nourishment of the Week
Community Vegetable Soup
Just as communities are built one person at a time, this simple soup comes together one ingredient at a time. Each vegetable contributes something
unique, and together they create something nourishing, comforting, and complete.
Ingredients
• 1 tablespoon olive oil
• 1 onion, diced
• 2
carrots, chopped
• 2 celery stalks, chopped
• 1 zucchini, chopped
• 1 cup green beans, trimmed and cut
• 1 can diced tomatoes (14 oz / 398 ml)
• 6 cups vegetable broth
• 1 teaspoon dried basil
• 1 teaspoon dried
oregano
• Salt and pepper to taste
• Optional: 1 can white beans or chickpeas for added protein
• Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Add zucchini and green beans. Stir for 2 minutes.
- Pour in tomatoes and vegetable broth.
- Add basil, oregano, salt, and
pepper.
- Bring to a gentle boil, then reduce heat and simmer for 25 to 30 minutes.
- Add beans if using and heat through.
- Garnish with fresh parsley before serving.
