This week’s nourishment is designed to fortify from the inside out. Beets, carrots, parsnips, a hint of ginger, and garlic simmered to create

Ingredients:
- 2 medium beets (peeled & cubed)
- 2 carrots (chopped)
- 1 parsnip (chopped)
- 1 small piece ginger (peeled & minced)
- 2 cloves garlic (chopped)
- 3 cups vegetable broth
- Olive oil, salt, pepper to taste
Instructions:
- Sauté garlic and ginger in olive oil until soft.
- Add chopped beets, carrots, parsnip. Stir and cook for 2-3 minutes.
- Pour in broth, bring to a boil, and then simmer until vegetables are tender.
- Let cool, then blend until smooth. Taste and adjust seasoning.
- Serve warm, noticing the steady heat and vibrant color.
