Ingredients
4 fresh artichokes, halved
3 Tbsp olive oil
Juice of 1 lemon
2 Tbsp fresh mint leaves, chopped
1 Tbsp fresh oregano leaves, chopped
Sea salt to taste
Method
Preheat oven to 400 °F (200 °C).
Trim artichokes and halve lengthwise.
Whisk olive oil, lemon juice, mint, oregano, and salt.
Brush over artichokes; cover with foil.
Roast 30–35 minutes until tender; uncover for
last 5 minutes for a light caramelization.
Finish with extra mint and a squeeze of lemon.
Serve warm or at room temperature after your Yin practice-letting the cooling herbs soothe the neck and back while the earthy artichoke grounds the heart space.
